Caramelized Apples:
1kg cooking apples
100g caster sugar
75g butter
1 tsp ground cinnamon

Cake Batter:
200g butter
300g caster sugar
4 eggs, separated
1 tsp ground cinnamon
350g self-raising flour
a pinch of salt

 

Preheat the oven to 170° fan / 200 F.

Peel, core and cut each apple into 12 segments.
Melt the butter in a wide pan, add the apple slices, sugar and cinnamon and gently stir.
Caramelize the apples by gently turning occasionally so they keep their shape, and simmer until you have a nice caramel sauce and apples cooked through.
This should take about 15 mins.
Butter and flour a cake tin.

Meanwhile, prepare the cake batter.
Melt the butter and pour into a bowl with the sugar, then beat using an electric whisk.
Add one egg yolk at a time and whisk each one into the mixture with a wooden spoon.
Stir in a pinch of salt, the cinnamon, 2/3 of the apples and the flour.

Using clean dry whisks, whisk the egg whites into soft peaks.
Using a metal spoon fold a heaped spoon of egg whites into the cake batter.
Gently fold in the rest of the egg whites and pour into your cake tin.
Pop in the oven and bake for 45 minutes to an hour, or until golden and firm to touch.

Once the caramelised apples have cooled, place on top of the cake.

Slice and serve.
