Couscous Salad

Perfect for a light lunch or part of a picnic.

 

Cous Cous Salad




White Large Casserole, £83.50

Serves 4

Ingredients
75g instant Couscous
¼ teaspoon ground cumin
2 small tomatoes finely chopped
Bunch of mint finely chopped
A carrot peeled and finely chopped
10cm cucumber, peeled and finely chopped
1 chicken breast, cooked and sliced
1 tablespoon olive oil
Juice of half a Lemon
Salt and freshly ground Pepper, to taste

 

Cook the couscous according to the instructions on the packet.

Leave to cool completely in the pan.

Stir through all the ingredients.

Season to taste and serve.

Instructions
  1. Cook the cous cous according to the instructions on the packet then allow to cool.
  2. Stir through the rest of the ingredients. Other nice things to add are tiny bits of cooked broccoli or peas, roast vegetables (especially butternut squash and sweet potato), a little lemon juice, chopped parsley, basil, dill, chives, fennel, celeriac prawns, sweet corn, tinned tuna or sliced ham.
  3. Invent your own combinations.
