We all know the humble cabbage is amongst the world’s healthiest foods. Less well known is that the red/purple types are top of that list. There are hundreds of exciting varieties to choose from, yet it has a distinctly unglamorous perception. Perhaps it was the overcooked slime, devoid of taste that slithered onto our school dinner plates that have left us with a tainted view of this delicious and versatile staple. The cabbage we enjoyed at home as a child was in contrast barely cooked and fried with butter and lashings of black pepper, or wrapped around delicate and light fillings served with sour cream, chopped into the finest of slivers into salads and added to comforting soups. The cabbage positively shines when partnered with Pork and no Christmas would be complete without a fragrant pot of spiced red cabbage.
