Bircher Muesli


A healthy and delicious breakfast based on the original recipe devised by Swiss physician and nutritional pioneer Maximillian Bircher-Brenner. You can make it your own by adding other toppings such as yoghurt, chopped fruit, seeds or maple syrup for a really great start to the day

 

Bircher Muesli




French White Fluted Cereal – Bowl Set of Six, £59.00

Serves 2

100g rolled oats
300ml fresh apple juice
The juice of 1 lemon
A handful of good raisins (about 50g)
A small handful of shelled hazelnuts
A small handful of almonds
A small handful of flaked almonds
1 apple
½ tsp cinnamon
1 banana

 

Combine the oats, apple juice, lemon juice and raisins in a bowl and pop in the fridge overnight.

Crush the whole almonds and the hazelnuts in a pestle and mortar to break them up a little.

Toast all the nuts in a frying pan until golden and set aside.

Core the apple just before eating, keeping the skin on, and grate into the oats.

Sprinkle in the cinnamon and stir through.

Spoon into bowls, scatter over the nuts, slice in the banana and enjoy!
