Pre heat the oven to 170°C, 200°F.
Peel, core and chop the apples.
Melt the butter and pour into a bowl with the sugar and stir.
Add the egg yolks one by one and mix well.
Beat the egg whites until still then fold into the butter mixture.
Slowly beat in the flour.
Then grease and flour the baking tin.
Add the vanilla sugar, baking powder and apples, mix well.
Pour into the baking tin and bake for 45 minutes to an hour.
Leave it to cool.
For the Caramelised apples.
Mix the cooking apples in a pan with a knob of butter and good sprinkling of sugar under golden brown.
Place on top of the cake.
Slice and serve.
