White Shallow Casserole, £94.50

1 kg Maris piper potatoes
Freshly ground black pepper
Boil the potatoes in their skins for about half an hour, or until just tender all the way through when poked with a sharp knife.
Leave to cool completely then peel off the skin with your fingers.
Cut the potatoes into dice sized cubes and season with salt and pepper.
On a high heat, heat the oil in a large frying pan.
Once the oil is hot, add the potatoes and shake the pan.
Continue frying and turning the potatoes until they are brown on all sides.
Serve with more seasoning if needed.
