Ingredients
2 cloves of garlic
Large bunch of basil – remove tough stalks
75g pine nuts – toast in a frying pan until brown, then cool
100ml olive oil
50g block of fresh parmesan
juice of 1/2 a lemon
salt & freshly ground black pepper

Using an electric blender, whizz the garlic to a paste, add the parmesan and blitz until finely chopped.

Add the basil, olive oil and pine nuts and blend to desired consistency.

Season to taste with the lemon juice, salt and pepper.
