Round Roasting Dish, £46.50
125g chorizo (cubed)
2 cloves of garlic
1kg tomatoes (peeled)
Maldon salt and freshly ground black pepper
Spaghetti (around 100g per person)
Fresh basil leaves and grated Parmesan to serve
Heat a drizzle of oil in a large frying pan on a medium heat. Once hot add the chorizo and cook until it begins to crisp and release its orange oil.
Turn down the heat and add the garlic, gently frying until golden. Cut the tomatoes into eights and add to the pan.
Season with salt, pepper and add another glug of oil, giving it all a good stir now and again, and simmer for about 15 minutes or until you have a thickish sauce.
Serve with the cooked spaghetti, freshly grated parmesan and a few basil leaves.
