These beautiful little parcels make a fantastic starter. They look impressive but
could not be easier to make. Fresh seafood is always lovely to servein summer
and these salmon and crab parcels are particularly delicious,
especially when served with a cucumber salad.

120g white crab meat
1tbsp olive oil
1 fresh chilli, seeds removed, finely chopped
Zest and juice of half a lemon
1 ripe avocado, cut into small chunks
A generous handful of chopped coriander, leaves only
Salt and freshly ground black pepper to taste
400g smoked salmon in large slices
12 coriander leaves
18 pomegranate seeds
Gently mix the crab, oil, chilli, lemon juice, and zests, avocado and chopped coriander together.
Taste and season accordingly.
Lay out the salmon slices (you may need a couple of slices per parcel but they stick together quite nicely) into approximately 15cm squares, spoon a dollop of the mixture into the centre and fold in the edges to form a little parcel.
Turn over and decorate with a chive, two coriander leaves and three pomegranate seeds.
Enjoy with friends and a sparkly glass of bubbly.
