300g fresh raspberries
250ml fresh lemon juice
125ml cold water
50g golden caster sugar
1 litre sparkling water
Fresh mint and ice to serve
Purée the raspberries in a food processor until smooth and then pass through a fine sieve, using a wooden spoon to push through the pulp, discard the seeds.
Whisk the sugar with cold water and honey until it all dissolves.
Stir in the raspberry pulp, lemon juice and sparkling water.
Serve over ice with chopped, fresh mint.
